yes, you are right...it obviously depends on the individual and how your body responds...for me, I know I'm gluten intolerant, but realizing some GF flours I buy to bake my own bread, may just have too much rice and potato flour...I've got a wonderful recipe using almond, coconut, and tapioca flour...need to stick to that one!
