
Jesus Christ is my Lord and Savior. I have a son soon to be off to college. I have two Australian Shepherds and a cat. Cooking is like meditation and mental health for me and a big way of how I share my love.
For dinner tonight:
Pan seared then oven roasted (350 * for 20 minutes) pork tenderloin (marinated in ginger, cumin, star anise, salt, honey and dry sherry) over sweet potatoes mashed with salt, dash of cayenne and butter, salad of tomatoes, spearmint, avocado and sprouts with raspberry dressing.
@CookingKatie That looks very good. Try lightly marinating the loin in soy sauce for 30 minutes, then butterflying your pork loin and smearing a thick layer of cream cheese ( a room temp 8 oz block) topped with fresh sliced jalapeños and tying it back up with twine. Remove jalapeño seeds if you don’t want the heat. Bake at 400 for 20 minutes or grill it.. I thought it sounded gross but did it anyway. It was very good. I also have 2 excellent easy recipes for pork medallions cut from a loin.
