I like to buy southern style chopped cabbage slaw. It saves time in preparation. I use it for the beloved coleslaw, but also for homemade egg rolls, fish (or tofu fish) soft tacos with sauce, and vegetable soup.
Carrot Loaded Mashed Potatoes
High in Vitamin A
Mash cooked potatoes or instant OK
Add skim milk or soy milk, 2 TBL light sour cream and 2 TBL
parkay FF butter. Salt, pepper and 1 tsp onion spice.
1/2 cup cooked carrots, crushed in a sterile hand.
Heat on medium and then taste test. Add more sour cream
or FF butter if you need it. Your mashed potatoes are cooked to
your taste. Optional: garlic/parsley as a very light dusting to garnish.
QUICKY SNACK OR MEAL:

Asian Style Soup: Quicky Meals Cookbook
One large can chinese mixed vegetables drained
One can water chestnuts drained
Six cups water
1/2 cup corn starch, whisk in over medium heat
4 beef or vegetable bullion cubes
3 tsp EACH Jugo sauce and soy sauce
a pinch of salt -or- to the taste
1 tsp garlic/pepper
Large pot, make the sauce with a
wisk when thick add vegetables. Optional
celery or cabbage. Serve when hot and bubbly after a few
minutes. Garnish crunchy chow mein noodles.

Squash Roasted Onion Healthy Soup
3/4 cup fresh thin sliced onions,
Roast 370 15 minutes in the oven
with cooking spray.
1 can butternut squash soup with
an extra can of water.
1 can of cream of celery soup with
1/2 extra can water.
1/4 tsp each garlic pepper, oregano,
salt.
1 TBL light sour cream or vegan
1/2 cup cooked or canned green peas.
Garnish with 1 TBL parkay fat free
Cook and stir on medium in a
pot on the stovetop, then garnish.

Sweet Potato Mousse
Boil and peel 3 large sweet potatoes
Add to food processor; 1/3 brick light cream cheese (or vegan), 1 TBL light or vegan sour cream, 1 tsp vanilla, 7 oz sweetened condensed milk (or vegan). Whip and spoon into dessert cups and refrigerate. Garnish with crushed graham crackers, or, cinnamon, or, brown sugar, or, marshmallows, etc....
Festive Fruit Salad
One can each drained in a colander: 1 peaches, 2 fruit cocktail, 1 pears, 1/2 can pineapple tidbits, 1 apricots, 1 c. fresh red seedless grapes.
1/2 cup Roasted walnuts
Sauce: 3 TBL sweetened condensed milk, 1 TBL mayonaise, 1 TBL lite sour cream.
Garnish: spearmint
Smokey Red Pepper Dip/Spread
3 pieces canned red pepper
4 bricks light cream cheese
1 TBL light sour cream
2 tsp imitation bacon bits
2 packets Jamon (ham) spice
1 TBL smoked paprika
1 tsp smoke flavoring
1 tsp red pepper brine
Food processor and garnish with fresh chopped red bell pepper. Serve with crackers
Cont. Baked Spaghetti
Bring water to a boil in a cookpot. Drop in the noodles and place a lid on. Turn the heat off. While you do this, roast the vegetables on a pan in the oven with cooking spray.
Drain noodles after 15 minutes and add the sauce. Lid on and cook on medium for 5 minutes. Turn heat off. Choose three cheeses, or vegan cheeses and pulse in the food processor. A large casserole add cheese to the middle and top. Bake 360 16 min.
Roasted Vegetable Baked Spaghetti
One half bag mixed peppers and onions frozen.
1 fresh red pepper cut into large cubes
One box spaghetti noodles
One spaghetti sauce
Pinch of salt and pepper
1 tsp each oregano, basil, garlic
1 packet stevia sweetener
Cooking spray
Three cheeses of your choice, making two cups.

I often have a healthy BLT for breakfast. I toast low calorie bread with butter flavor cooking spray in the oven for a few minutes. I use green leaf lettuce and organic tomatoes. Vegan mayonaise is great tasting. Options for bacon: roasted tofu, imitation bacon bits, vegetarian bacon and pepperoni, or turkey bacon. Large seedless grapes as a side.

Spray oil on a baking sheet. Add the vegetables.
Add veggie chicken or sausage or chicken or turkey sausage.
Roast 375 for about 20 minutes. Open the oven and re apply the cooking spray and taste test. Roast 8--10 more minutes ( if needed)....... until you get the light brown color, and beans are crisp/tender. Garnish with tan sauce if desired.

Roasted green beans/potatoes:
A bag of fresh whole green beans. Clip the ends and cut out any dark spots. Leave whole. Start a pot of boiling water.
Cube three fresh potatoes.
Place these vegetables in the boiling water for three minutes to par boil.
